Mushrooms are rich in selenium, a powerful antioxidant which helps to prevent damage to cells and tissues and strengthens the immune system. They also happen to be one of the few natural sources of Vitamin D and a great source of B Vitamins, both of which are important for healthy bones and normal functioning of the nervous system respectively. Additionally, mushrooms also have a higher content of potassium than most fruits and vegetables; in fact, one medium-sized mushroom contains more potassium than a single banana.

Whether served as a meal on their own or as a delicious side, mushrooms are extremely adaptable and easy to prepare. They can be sauteed with onions, added to omelets or breakfast scrambles and included in sandwiches and wraps.
